In June 2023, I had just received tenure. I booked a one-way ticket to Athens for what I thought would be a few weeks of rest. I ended up staying for months—and it changed everything.
One evening in Thisio, I walked into Lost Roots, a wine bar run by three sommeliers. Vagelis poured me a glass of Xinomavro, and I asked the question that would reshape my life: "Why doesn't anyone know about this?"
He introduced me to the wines of Naoussa, drove me through Macedonia's wine roads, connected me with winemakers like Kostis Dalamara and Apostolos Thymiopoulos. I tasted wines from 150-year-old vines on volcanic Santorini. I discovered that Greece produces world-class wines—Burgundy-quality, at a fraction of the price—that almost nobody outside the country knows about.
3 SOMS is named after those three sommeliers who changed my palate. The name they wanted for their bar, but their partners wouldn't allow.
